Firstly, I suck at blogging.

It's only been in the past year that I've started to notice and appreciate halloumi cheese.  It's especially amazing when grilled and put in sandwiches, either as a topping or the star of the show.

In Brighton one weekend, we ate a really good halloumi sandwich with beetroot. 

It was so good we proceeded to go home and make our own version, which was even better.  Take thick slices of halloumi and pan fry it over medium low heat for a few minutes.  Only a tiny bit a oil is needed for this. 

We used fresh store bought ciabatta bread. Then added caramelized onions, mushrooms and rocket.  Yes, in London it's called rocket... and I like it that way.
