A sandwich for every mood

A good sandwich can be difficult to make on your own.  Who has all those ingredients? Or that perfect bread?  Here is a fresh and delicious veggie based sandwich that we made in no time with some leftover things from the fridge.

Sandwiches are fun to make because you can be creative with them.  These are the ingredients we used, any and all can be substituted!

-2 slices of awesome bread.  And yes, it's very important that it be awesome. 
-some nice sharp cheese
-couple slices of salami (or try out prosciutto, bacon, or maybe a smokey ham) 
-sliced eggplant 
-sliced mushrooms 
-sliced onions
-arugula 
-a ripe fig
-balsamic vinegar
-olive oil
-salt and pepper 
Take the veggies (eggplant, mushrooms and onions) and roast them in the oven with olive oil and salt.  In the meantime, mash up the fig with a small amount of balsamic vinegar to make a nice sweet and tangy sauce.  It should be still be thick in consitency, about slightly thinner than regular jam.  The best part about this sandwich is the bread.  I buy this really awesome, awesome, multi-seed with honey bread from Trader Joes.  (Secret: it is perfection with nutella and peanut butter.) Spread salami over one slice of bread and the cheese over the other.  Lighly toast in the oven.  When both veggies and bread are ready, smear the fig sauce over everything, and top with a handful of arugula, and a sprinkle of fresh black pepper.

By the way, I bought the figs because I was so obsessed with the stuffed figs in Montreal.  Talk about inspiration... :)

Anyways, this sandwich is superb and the fig sauce adds tremendous flavor, definitely a nice change of pace from your typical sandwich.  Next time you have some leftover veggies, try this method!
