Creamed Spinach - All passion and no sin
There is something about creamed spinach this year that I have fallen in love with. It might be the idea of something that seems relatively healthy until you understand the true ingredients and realize you just consumed a stick of butter and than some. It may also be that creamed spinach is a warming side that is not a sauce but gives your main dish an extra wet consistency when paired with a steak, for example.
I cannot take complete credit for this dish. This was completely inspired by my roommate, Astha, who made this for dinner one night as I awkwardly took 'bites' of it while she tried to finish cooking her meal. I am pleased to say this creamed spinach has no hidden calories and is very healthy,cheap, low fat, but most importantly a very flavorful, rich, and decadent dish. Per my title...this spinach is all passion with no sin!
1 package of defrosted frozen spinach
1/2 cup of part skim ricotta cheese
1/2 cup of warm water
3-4 cloves of garlic, sliced
1 tablespoon Olive Oil
1 bouillon cube
Coat a non-stick skillet with olive oil and let it spread throughout the pan. Throw in the sliced garlic cloves and let them crisp slightly in the olive oil. Turn the heat on medium high. In a separate bowl, dissolve the bouillon cube in warm water. Mix until bouillon is fully blended with the water. Pour the flavored water into the skillet and mix in defrosted spinach. Once spinach and broth is mixed together, turn flame to high heat to let leftover water evaporate. Once remnant water is gone, turn heat down. Mix in ricotta cheese.
Serve this as a side for your steak, use it as a filling for baked potatoes or serve it with spaghetti and homemade tomato sauce like my roommate did...it's incredible. This entire dish has about 4 servings, about 70 to 100 calories per serving. Cooking time is about 10 minutes. ENJOY!
