Potato Latkas with Sour Cream and Smoked Salmon
-2 potatoes
-half a yellow onion
-1 egg
-a little all purpose flour
-peanut oil
-sour cream
-scallions or chives
-smoked salmon
Grate the potatoes (skin on is fine) into a large bowl. Using a strainer or mesh cloth, squeeze out as much juice as possible from potatoes. Next, grate in the onion, add egg and if needed, add a little flour for thickening. Season with salt and pepper to taste. Heat a light coating of peanut oil in a shallow frying pan. Form patties and fry for about 3 minutes per side. Set on paper towel to drain excess oil. In a small bowl, chop a couple stalks of scallions or chives. Add the sour cream and mix. To serve, put a spoonful of sour cream mixture on latka and top with smoked salmon. Enjoy!
