roasted butternut squash pasta

Autumn is here!!!!!

Last week I decided to buy a butternut squash with no idea what I was going to do with it. My original thought was to make a lasagna, but lack of ingredients and laziness kicked in and I ended up making a super simple pasta instead. But not to worry friends, it was absolutely delicious!
-medium butternut squash
-half an onion or shallot
-1 clove of minced garlic
-3 tbsp. olive oil
-1 tbsp. butter
-1/4 cup bread crumbs
-salt and pepper
-reserved pasta water

Peel and dice butternut squash into approx. 1 inch pieces. Combine squash, chopped onions, and garlic in a baking dish. Toss mixture with olive oil, salt, and pepper. Roast in the oven at 400 degrees until soft (for me it took about 30-40 minutes).  

Boil pasta and drain reserving about a half cup of the pasta water.  

When the squash is done, melt 1 tbsp of butter in a saucepan and add breadcrumbs.  Cook breadcrumbs until slightly toasted and add the squash mixture and pasta.  Add some pasta water if it's too dry.  I added about a half cup of water and cooked for about 3 minutes until done.
